Ingredients
2 lb Broccoli, stalk, fresh , cut into spears
0.33 cup Sour Cream
0.25 cup mayonnaise
1 floz frozen orange juice concentrate (2 tablespoons)
1 tbsp dijon mustard
1 tsp ground basil leaves
1 lb Lunchmeat, turkey breast, smoked , very thinly sliced


Directions
1 Arrange the broccoli spears in a single layer in a large, shallow microwaveable dish.
2 Add 1 tablespoon water, cover the dish tightly with plastic wrap and microwave on HIGH (100%) power for 6 to 7 minutes or until the broccoli becomes crisp and tender, rearranging the spears after 4 minutes.
3 Remove the plastic wrap, drain the water from the broccoli and place the broccoli in cold water immediately to stop the broccoli from cooking further, then drain well and pat the broccoli dry with a paper towel.
4 In a small bowl combine the sour cream, mayonnaise, juice concentrate, mustard, and basil and mix well.
5 Cut the turkey slices into strips about 2-inches wide. Spread the sour cream mixture evenly over the strips, then place one piece of broccoli at the short end of each turkey strip.
6 Roll up the turkey around the broccoli starting from the short end of the strips, allowing the broccoli to stick out from one end of the roll-up, then place the roll-ups on a serving platter and cover with plastic wrap, refrigerating until ready to serve.
