Ingredients
1.25 lb medium zucchini , cut into 1-inch thick slices
1 tbsp fresh lemon juice
1 tbsp extra virgin olive oil
0.5 tsp salt
0.5 tsp caraway seeds
0.5 tsp ground coriander
0.5 tsp hot pepper sauce (or harissa)
1 medium garlic cloves , crushed
0.25 cup crumbled feta cheese


Directions
1 Position zucchini in a large saucepan and cover with water. Make sure water is at least 1 inch above top of zucchini.
2 Cook for 20 minutes after water comes to a boil. Do not overcook; zucchini should be tender, but not mushy.
3 Drain zucchini in a colander. Keep zucchini in colander and smash with a fork. Drain well.
4 Mix lemon juice, oil, salt, caraway, coriander, hot pepper sauce, and garlic in a bowl. Toss in zucchini and combine until all zucchini is coated. Scatter feta over top.
Additional Information
Harissa is a red hot sauce made from chili peppers. Use generously or sparingly depending on how much heat you like. If you can not find harissa, chili powder or hot sauce can be used. This salad pairs well with grilled pita bread.
