Servings
Ingredients
2 Gelatin, strawberry, dry mix, serving
1.5 cup water , boiling
1.33 cup water , cold
2 tbsp rum (or water)
4 oz frozen low fat whipped topping , thawed
1 cup fresh raspberries


Directions
1 Combine in a large bowl the boiling water to dissolve gelatin. Stir in cold water and rum. Cover and chill until partially set (consistency of unbeaten egg whites), about 1 to 1 1/2 hours.
2 Place 1 1/2 cups of the gelatin mixture in a medium bowl; cover and set aside at room temperature. Whisk half of the dessert topping (1/4 of an 8-ounce container) into the remaining gelatin mixture until combined. Pour into a 2-quart square baking dish. Cover and chill until almost firm, about 2 hours.
3 Stir raspberries into reserved 1 1/2 cups gelatin mixture. Spoon over top of gelatin mixture in dish. Cover and chill at least 3 hours or overnight. Cut into squares to serve. Top each square with some of the remaining whipped topping.
Additional Information
Great to keep on hand for kids to snack on after school but be sure to substitute rum with water
