Servings
Ingredients
3 tbsp balsamic vinegar
2 tbsp cold water
1 tbsp extra virgin olive oil
1 tbsp chicken liver pate (or olive pate)
0.25 tsp salt
0.12 tsp black pepper
1 medium garlic cloves , crushed
6 cup salad greens
0.5 cup fresh chopped red onion
0.25 cup fresh basil
6 medium tomatoes , halved (a mix of red, yellow and green tomatoes)


Directions
1 Whisk together vinegar, water, oil, olive pate, salt, pepper, and garlic in a small bowl.
2 Arrange greens on a serving platter. Top with half the onion and half the basil. Lay tomato slices overtop of basil and the rest of the onion and basil over top of the tomatoes. Serve dressing on the side or spooned over salad.
Additional Information
Any combination of tomatoes will work in this salad. Olive pâté comes in tubes or jars and can be found with the condiments or in the ethnic-foods section of your supermarket. If you cannot find that, you can grind up olives from a can using a mortar and pestle.
