Ingredients
2.12 cup Flour, all purpose, white, bleached, enriched baked value sifted , 2 cups plus 2 tablespoons
2 tsp low sodium baking powder
1.12 cup unsalted butter , softened (2 sticks plus 2 tablespoons)
1.25 cup sugar
6 eggs
1.5 tsp grated orange peel , or lemon peel (or more to taste)
1 tsp vanilla extract


Directions
1 Preheat the oven to 375 degrees F. Butter a Bundt pan and set aside.
2 Sift the flour and the baking powder into a small bowl.
3 Add the butter to a medium-size mixing bowl; using an electric mixer, beat on medium speed until smooth and fluffy.
4 Add in the sugar, then the eggs, and then the orange or lemon rind and vanilla, continuing to beat.
5 Gradually beat in the combined flour and baking powder on low speed. Continue mixing on medium speed until the batter is smooth.
6 Pour batter into the prepared Bundt pan. Bake 1 hour or until the cake is golden and a toothpick inserted into the center comes out clean. Remove immediately from the pan and let cool on a rack.
Additional Information
You can substitute two loaf pans in place of the bundt pan; just decrease baking time to 55 minutes.
