Ingredients
2 tbsp olive oil
1 red onion , diced
2 tsp fresh ginger root , grated
4 medium garlic cloves , minced
1 tsp ground coriander
2 tsp curry powder
1 cup canned crushed tomatoes
1 lb medium zucchini , quartered lengthwise and chopped into large pieces


Directions
1 Pour the olive oil in a nonstick skillet and heat over medium-high. Place the onion, ginger, and garlic in the skillet and sauté for approximately 5 minutes.
2 Add the curry powder and coriander and cook for another minute.
3 Mix in the zucchini and tomatoes and simmer for about 10 minutes.
Additional Information
Serve as a side dish or even as a dip.
