Servings
Ingredients
1 olive oil cooking spray
1 medium onions , chopped
3 medium garlic cloves , minced
29 oz canned unsalted diced tomatoes
6 floz Vegetarian Meat, beef, ground (or 1 cup textured vegetable protein)
0.33 cup chopped parsley
0.25 cup cold water
0.75 tsp italian seasoning
0.75 tsp ground basil leaves
0.5 tsp oregano leaves
0.12 tsp ground nutmeg
1 pinch salt
1 pinch black pepper


Directions
1 Coat a pot with cooking spray and place over medium heat. Cook onion and garlic 3 to 5 minutes or until soft.
2 Mix in tomatoes, soy burger crumbles, parsley, water, Italian seasoning, basil, oregano, and nutmeg and let boil. Lower heat and simmer 20 minutes, stirring often. Sprinkle with salt and pepper.
Additional Information
Real sausage or meatballs can be used if desired, but the soy burger is lower in fat and sodium and still tastes great.
