Ingredients
1 cup sun dried tomatoes
0.25 cup sour cream
3 tbsp mayonnaise
1.5 tsp dried basil
1 tsp minced garlic
3 fresh tomatoes , chopped
24 oz fresh plum tomatoes , quartered (3 cups)
3 g goat cheese
2 g cold water , boiling


Directions
1 In small bowl, cover sun dried tomatoes with boiling water. Let stand 15 minutes to soften. Drain.
2 In food processor or blender, puree goat cheese, sour cream, mayonnaise, basil, and garlic until smooth.
3 Chop all tomatoes.
4 In serving bowl, mix all tomatoes. Toss with dressing. Serve.
Additional Information
For a variety of color use yellow or orange tomatoes.
