Servings
Ingredients
1 quart cold water
0.25 tsp salt
1 cup cornmeal
0.5 cup tomato sauce
1 tsp ground oregano , dried
0.5 cup frozen sweet corn kernels , drained
0.5 tsp hot red pepper flakes
1 pinch black pepper (to taste)

Directions
1 Fill a 3-quart saucepan of water, add the salt, and bring to a boil. Add the cornmeal slowly. Decrease the heat and simmer for about 20 to 25 minutes, stirring frequently.
2 Put the tomato sauce, oregano, corn, hot pepper flakes, and pepper in a saucepan and heat.
3 Once the cornmeal has become stiff, transfer half into a bowl and top with half of the tomato sauce mixture. Place the rest of the cornmeal on top and pour the remaining tomato sauce mixture over all.
4 Let sit for 5 to 10 minutes then slice into squares.
