1 Heat oil in large pan and fry the onion for 5 minutes until it is soft, not brown. 2 Add the chopped tomatoes, chicken stock, and cilantro to the pan, bring to boil, then lower heat, cover pan and simmer for 15 minutes or until tomatoes are soft. 3 Remove and discard the cilantro. Place soup through a strainer and return to clean pan. 4 Season and heat through. 5 When serving, sprinkle with coarsely ground pepper
