Ingredients
12 piece 100% whole grain bread , baguette sliced 1/2" thick
1 tbsp extra virgin olive oil
1 large tomato , chopped (about 1 cup)
3 tbsp fresh basil , chopped
1 tbsp canned black olives , chopped (or fresh olives from deli counter)
0.5 tsp salt
0.5 tsp black pepper
12 oz shredded mozzarella cheese


Directions
1 Heat oven to 375°F.
2 Place bread slices on ungreased cookie sheet. Toast in preheated oven 3-5 minutes. If the bottom side of bread is moist, turn slice over and toast 3-5 minutes more.
3 Remove from oven. Drizzle 1/4 teaspoon oil over each bread slice. Set aside.
4 In small bowl, mix tomato, basil, olives, salt, and pepper.
5 Spread tomato mixture evenly over bread slices.
6 Sprinkle 1 oz.. cheese on each slice.
7 Bake approximately 8 minutes until cheese is melted. Serve hot.
