Ingredients
1 tbsp vegetable oil
1 tsp mustard seed , crushed
8 medium garlic cloves , sliced
16 oz fresh plum tomatoes , chopped and seeded
1.5 tsp curry powder
0.5 tsp salt


Directions
1 Pour oil in a frying pan and heat over medium-high heat. Saute mustard seeds and garlic 10 seconds, shaking pan continually. Mix in the tomato, curry powder, and salt and cook 1 minutes longer. Lower heat to medium and cook 6 minutes, stirring often.
