Ingredients
1 cooking spray
0.67 cup fresh chopped onion
1 whole jalapeno pepper , finely chopped
2 medium garlic cloves , minced
2 lb Tomatillo, fresh, medium , husks removed, rinsed, and quartered
4 cup low sodium vegetable broth
0.25 cup half & half
3 tbsp fresh cilantro , finely chopped
1 pinch salt
1 pinch white pepper


Directions
1 Coat large pot with cooking spray and heat over medium. Cook onions, jalapeno pepper, and garlic for 5 minutes or until soft.
2 Add tomatillos and broth to pot. Bring to boil. Lower heat, cover, and simmer 10 to 15 minutes, until tomatillos are very soft.
3 In food processor or blender, purée mixture until there are no lumps. Transfer to serving bowl.
4 Add half & half and cilantro. Stir. Sprinkle with salt and pepper.
5 Cover and chill 3 to 4 hours. Serve.
