1 Preheat oven to 400°F. 2 Place tofu between two flat plates or baking pans. Weight top with a heavy object, to flattened cakes. Let stand 30 minutes. 3 In food processor, puree onions, jalapeno peppers, soy sauce, vinegar, brown sugar, ginger, garlic, thyme, cloves, cinnamon, and pepper. Transfer to medium mixing bowl. 4 Drain pressed tofu. 5 Cut each cake into three slices. Stack slices, then cut two diagonals, making an X. This will make 12 triangular pieces from each block of tofu. 6 Add tofu to jerk sauce. Gently toss tofu. 7 Place marinated tofu in 13" x 9" glass baking dish. 8 Bake 1 hour, turning tofu every 20 minutes. Serve.
