12 oz firm tofu , grated
0.5 cup chopped red bell peppers (or green peppers)
0.5 cup fresh chopped celery (optional)
2 tbsp fresh chopped green onion (or red onions)
2 tbsp chopped parsley
1 tbsp fresh dill weed , chopped (or 1 teaspoon dried)
1 tsp dijon mustard
1 tsp fresh lemon juice
0.33 cup light mayonnaise
1 pinch black pepper (or more to taste)
1 Spinach, fresh, bunch (or torn lettuce)
0.5 fresh tomatoes , sliced


Directions
1 Mix together the tofu, peppers, celery (optional), scallions, dill, mustard, lemon juice, mayonnaise, and black pepper until well combined.
2 Serve with spinach or lettuce and tomato slices.
Additional Information
Works great as a sandwich filling.
