Ingredients
2 tbsp olive oil (or canola oil)
0.5 cup fresh chopped red onion
2.5 cup red skinned potatoes , sliced
2 cup frozen cut green beans
0.5 tsp italian seasoning
0.5 tsp garlic salt
14 oz firm tofu , cut into 1/2-inch cubes
2 roma tomatoes , thinly sliced
1 large hard-boiled eggs , chopped


Directions
1 Using a 12-inch skillet, heat oil over medium-high heat. Cook onion in oil 2 minutes, stirring frequently.
2 Stir in potatoes and reduce heat to medium-low. Cover and cook 10 minutes, stirring occasionally, until potatoes are tender.
3 Stir in green beans, Italian seasoning, and garlic salt. Cover and cook 6 minutes, stirring until beans are tender and potatoes are light golden brown.
4 Stir in tofu and tomatoes. Cook 2 to 3 minutes, stirring gently, just until hot. Sprinkle each serving with egg.
