Ingredients
32 oz fresh shredded cabbage , green
0.75 cup grated carrots
0.75 cup Celery, cooked, drained, diced , finely
8 oz firm tofu , drained (about 6 ounces)
2 oz light mayonnaise
4 tsp rice vinegar
2 tsp Mustard, prepared, original English, Colman's
1 tsp sugar
0.5 tsp salt
0.12 tsp chopped red bell peppers , ground
2 medium garlic cloves
0.25 cup chopped parsley


Directions
1 Mix cabbage, carrot, and celery in a bowl.
2 Using a food processor or blender and puree tofu, mayonnaise, vinegar, mustard, sugar, salt, red pepper, and garlic until smooth. Pulse in parsley. Toss mixture with cabbage. Wrap with plastic wrap and refrigerate.
