Ingredients
1 cooking spray
1.5 lb tilapia fillets , cut in to 4 pieces
0.25 tsp black pepper
1 pinch paprika , to taste
6 oz roasted red peppers with brine , rinsed and drained if bottled (about 6 ounces)
12 canned green olives , pimento stuffed, chopped
2 tbsp fresh chopped green onion (green and white parts)
2 tbsp chopped parsley
2 tsp olive oil
1.5 tsp dried basil , crumbled
1 medium lemons , quartered


Directions
1 Preheat the oven to 350 degrees F, and lightly spray a baking sheet with vegetable oil spray.
2 Rinse the fish and pat dry with paper towels, and put on the baking sheet.
3 Lightly spray with vegetable oil spray and sprinkle with black pepper and paprika.
4 Bake for 10 to 12 minutes or until the fish flakes easily when tested with a fork.
5 Meanwhile in a small bowl, stir together all the remaining ingredients except for the lemons.
6 To serve, squeeze a lemon wedge over each fillet. Top with equal amounts of the pepper-olive mixture.
