Ingredients
1 tbsp fresh thyme , chopped, divided
1.25 tsp salt
0.5 tsp black pepper
0.25 tsp ground allspice
1.75 lb extra lean beef tenderloin , trimmed
1 cooking spray
0.33 cup brandy
0.25 cup shallots, chopped
1.5 cup fat free unsalted beef broth ,


Directions
1 Mix together 2 teaspoons thyme, salt, pepper, and allspice. Massage mixture onto surface of beef. Cover securely with plastic wrap and chill 24 hours.
2 Preheat oven to 400 degrees F.
3 Heat a cooking spray coated frying pan over medium-high heat. Cook beef 5 minutes, flipping to sear on all sides. Move beef to a cooking spray coated rack and place in a roasting pan. Bake 26 minutes or until a meat thermometer reads at least 135 degrees F or until preferred degree of doneness. Take beef out of oven and let rest 10 minutes.
4 Add brandy to roasting pan and scrape bottom of pan to release all browned bits.
5 Heat a cooking spray coated frying pan over medium heat. Saute shallots 4 minutes. Pour in brandy mixture, broth, and remaining thyme. Let simmer 4 minutes or until mixture is reduced to 1 cup. Spoon some over beef and serve the rest on the side.
