1 In small pot, over medium heat combine oil, red pepper, garlic, bay leaves, and thyme. Simmer until temperature reaches 200°F. 2 Reduce heat to low and cook 20 minutes, making sure temperature does not exceed 220°F. 3 Remove from heat and cool to room temperature. Strain through a fine chinois set over a bowl. Discard remaining solids. 4 Store oil in airtight container, chilled, or use immediately.
