Ingredients
1.5 cup chopped leeks , cleaned and sliced
1.5 cup fresh chopped red onion
6 medium shallots , sliced
3 tbsp olive oil
0.25 cup white all purpose flour
14.5 oz low sodium vegetable broth
0.25 tsp thyme, leaves, ground
0.5 tsp salt
0.25 tsp black pepper


Directions
1 Cook leeks, onions, and shallots, in oil, in a pot for 2 to 3 minutes. Lower heat to medium-low and slowly cook 20 to 25 minutes or until vegetables are lightly browned. Whisk in flour and cook over medium heat 1 to 2 minutes.
2 Mix in broth, thyme, salt, and pepper and bring to a boil. Continue boiling, whisking continually 1 to 2 minutes or until thick.
Additional Information
This sauce is great over rice and vegetables or chicken.
