Ingredients
1 lb ground turkey
0.25 lb fresh green beans , ends and strings removed, minced
8 fresh green onions , ends trimmed, minced
1 cup fresh lemongrass , tough outer layers, stem end, and coarse leaves removed, minced (1 stalk, 5-8 inch)
3 tbsp fresh cilantro , minced
2 serrano chili peppers , stemmed and seeded
2 tbsp fish sauce
1 Eggs, large, raw
2 tbsp cornstarch
0.25 tsp sugar
2 tbsp olive oil


Directions
1 Combine turkey with green beans, onions, lemon grass, cilantro, chilies, fish sauce, egg, cornstarch, and sugar. Separate mixture into 16 sections and form into patties.
2 Heat oil over medium-high heat in a frying pan. Cook patties about 7 minutes, flipping one time or until fully cooked in the center. Take patties out of pan with a slotted spoon and let drain on paper towels.
Additional Information
These are great to take on the go to a picnic or campsite. Just freeze after cooking and reheat in a skillet.
