8 whole loin pork chops , cut 3/4 inch thick
1 cooking spray
1 tbsp canola oil
0.5 cup beef broth
1 tbsp fresh ginger root , grated
1 tbsp low sodium soy sauce
2 tsp lime peel zest
0.5 tsp hot red pepper flakes
1 cup fresh coconut milk
2 tbsp cornstarch
2 tbsp fresh cilantro , snipped


Directions
1 Trim visible fat from pork chops.
2 Coat large skillet with cooking spray, cook half of the chops in hot skillet over medium-high heat until brown on both sides. Place in a 4- to 5-quart slow cooker. Add oil to skillet. Brown remaining chops in hot oil. Drain off fat; set aside.
3 In small bowl, combine beef broth, ginger, soy sauce, lime peel, and crushed red pepper. Pour half of the broth mixture over chops in cooker. Place remaining chops in cooker; pour remaining broth mixture over all.
4 Cover and cook on low-heat setting for 5 hours or on high-heat setting for 2-1/2 hours.
5 Transfer pork chops to serving platter, reserving cooking liquid. Cover chops with foil to keep warm.
6 If using low-heat setting, turn to high-heat setting.
7 For sauce, strain cooking liquid and skim off fat. Return liquid to slow cooker.
8 In a small bowl, combine coconut milk, cornstarch and cilantro. Add to liquid in cooker. Cover and cook for 15 minutes more. Serve sauce over chops.
