0.33 cup small shallots , minced
0.33 cup fresh chopped green onion
4 medium cucumber , peeled, halved lengthwise, seeded, and thinly sliced
2 red hot chile peppers , halved lengthwise, seeded, and thinly sliced (or more to taste)
0.5 cup rice vinegar
2 tbsp sugar
0.5 tsp salt
0.25 cup fresh cilantro , chopped


Directions
1 Mix together shallots, onions, cucumbers, and chiles.
2 Whisk together vinegar, sugar, salt, and cilantro.
3 Toss vegetable mixture with vinegar mixture.
