1 lb extra lean ground beef (5% fat)
0.5 cup fresh peppermint , leaves, finely chopped
0.33 cup fresh cilantro , finely chopped
0.5 red onion , finely chopped
1 tsp hot red pepper flakes
3 tbsp fresh lime juice
2 tbsp fish sauce (Asian )
1 medium head cabbage , leaves separated (or Romaine lettuce)
1 medium limes , wedged (optional)


Directions
1 Brown the meat in a large skillet over medium-high heat 5-10 minutes. Drain.
2 Add the mint, cilantro, onion, red pepper, lime juice, and fish sauce. Stir until heated.
3 Spoon the mixture onto the center line of the cabbage or lettuce leaves and roll up. If desired, serve with lime wedges.
Additional Information
Blanch the cabbage leave for maximum retention of color and texture. To do this, add cleaned leaves to boiling water and allow to soak for less than 1 minute. Place the leaves directly into an ice water bath for one minute then place on paper towels for drainage.
