1 lb top sirloin steak, lean , fat removed
0.5 cup low sodium soy sauce
0.25 cup fresh cilantro , chopped
1 cup fresh lime juice
0.5 cup palm sugar
1 tbsp fish sauce
2 tbsp olive oil
1 red onion , thinly sliced
0.25 cup scallions, chopped
0.25 cup fresh cilantro
3 kaffir lime leaves , rolled together and sliced into thin into wide strips


Directions
1 Place the soy sauce and cilantro stems in a bowl and marinate the beef for 1 to 2 hours.
2 Put the lime juice, sugar, and fish sauce in a pot and heat over medium low heat until sugar melts, stir often.
3 Once the sugar as melted, remove from the pot and let chill.
4 Heat a sauté pan on high heat for 5 minutes.
5 Take the sirloin out of the marinade and dispose of the marinade.
6 Pour the olive oil in the pan and add the beef. Let each side cook for 3 to 4 minutes. Once the beef is done, remove from the pan and cut into thin slices.
7 Place the red onion, scallions, cilantro leaves, and kaffir lime leaves in a bowl. Then, situate the beef over them and pour the chilled sauce on top.
