2 tbsp quick cooking tapioca
2 tsp sugar (optional)
1 SPLENDA® No Calorie Sweetener packets
1 eggs
1 cup whole milk
0.5 tsp vanilla extract
0.33 cup fresh raspberries (or other mixed berries)


Directions
1 In microwave-safe bowl, whisk tapioca, sweetner, egg, milk, and sugar, if desired.
2 Microwave for 3 minutes on high.
3 Whisk together again and microwave for 2 additional minutes or until mixture begins to boil.
4 Stir in vanilla extract.
5 Divide between 4 small dessert bowls.
6 Cover with plastic wrap or waxed paper. Allow to cool at room temperature or in refrigerator at least 20 minutes. Mixture will thicken.
7 Remove from refrigerator, stir and spoon berries on top.
Additional Information
Stovetop Instruction: 1 In small saucepan, whisk tapioca, sweetner, egg, milk, and sugar, if desired. Allow to stand for 5 minutes. 2 Over medium heat, bring to boil, stirring constantly, about 7 minutes. 3 Remove from heat. Stir in vanilla extract. 3 Divide between 4 small dessert bowls. 4 Cover with plastic wrap or waxed paper. Allow to cool at room temperature or in refrigerator at least 20 minutes. Mixture will thicken. 5 Remove from refrigerator, stir, and spoon berries on top.
