Ingredients
0.25 cup orange juice
2 tbsp fresh lemon juice
20 oz salmon fillet , skinless (4 (5-ounce) fillets, about 1 1/4 inches thick)
1 tbsp packed brown sugar
1 tbsp paprika
0.5 tsp salt
0.5 tsp garlic powder
0.5 tsp onion powder
0.5 tsp ground coriander
0.25 tsp ground cinnamon
0.25 tsp ground cayenne (red pepper)
0.12 tsp ground cumin
0.5 tsp canola oil


Directions
1 In a large plastic bag with a zip top, add both orange and lemon juice with the salmon. Seal bag, pushing out air and turning to coat.
2 Refrigerate for 30 minutes, turning after 15 minutes.
3 Preheat oven to 400 degrees F. Grease the bottom of a shallow baking dish with the canola oil.
4 In a small bowl, mix together the brown sugar and the next 8 seasonings.
5 Remove salmon from marinade and throw out any remaining marinade.
6 Pat fillets dry with a paper towel and place in a single layer in the baking dish.
7 Rub the seasoning mixture evenly over the top and sides of the fillets.
8 Bake until fish is opaque throughout, about 10 to 12 minutes. Serve immediately.
Additional Information
This mix of seasoning could be used on any fish.
