Dressing
2 tbsp light mayonnaise
2 tbsp Horseradish, cream
2 tbsp yellow mustard
1 tbsp fresh lime juice (or lemon juice)
2 medium garlic cloves , peeled and finely minced
3 scallions , finely diced

Salad
0.5 lb cooked chicken breast, diced
0.25 cup chopped apples , unpeeled and cored (Granny Smith, optional)
8 Lettuce, romaine, fresh, inner leaf
4 tbsp fresh chives , chopped (optional)
1 tbsp sweetener (sugar substitute) (optional)


Directions
1 Whisk the dressing ingredients together in a salad bowl. Add the chicken. If you are using the apple, add it along with the chicken. If you choose to omit the fruit, you may want to add the small amount of sugar substitute.
2 Serving suggestion: Place lettuce leaves on 4 plates. Spoon salad on top and sprinkle with chives.
Additional Information
Variation: Using a food processor with the knife blade, blend all the ingredients, except for the apple, until desired consistency. If you choose to add the apple, grate and mix in by hand.
