1 Preheat the oven to 350 degrees F. 2 Rinse the fish, place it, skin side down, in a lightly oiled baking dish and set it aside. In a bowl, whisk together the hoisin sauce, miso, sake, ginger, and rice vinegar. 3 Pour the sauce evenly over the fish, cover, and bake for 25 to 30 minutes, until the fish flakes easily with a fork. 4 Serve garnished with scallions and red pepper strips.
