1 In a pot, heat oil over medium heat. Sauté garlic, onions, and curry until softened, for about 4 minutes. 2 Add in broth, broccoli, and sweet potatoes; bring to a boil. Lower heat, cover, and simmer until potatoes and broccoli are soft, about 30 minutes. 3 Place soup in a food processor or blender and add honey, puree until creamy, and serve.
Additional Information
Can be made 1 day in advance, gently reheat adding more broth if too thick. For a stronger flavor increase curry to 1 1/2 teaspoons.
