Ingredients
2 cup sliced carrots , 1/4-inch thick slices
0.5 cup fresh chopped celery , 1/2-inch thick slices
8 oz Pineapple, tidbits, canned, with juice
1 tbsp vinegar
2 tsp cornstarch
1 tsp light soy sauce
0.12 tsp salt
2 tbsp Margarine, 80% fat, unsalted
0.25 cup fresh chopped green onion
0.25 cup Equal packets


Directions
1 Cook carrots and celery in medium saucepan in small amount of water for about 8 minutes or until tender. Then, drain and set aside.
2 Add enough water to reserved pineapple juice to make 1/2 cup liquid. Stir in vinegar, cornstarch, soy sauce, and salt.
3 Cook in medium saucepan until liquid thickens, stirring frequently.
4 Add butter, drained pineapple, and onions, and continue stirring until all ingredients are heated.
5 Add drained carrots and celery, then cook for about 2 minutes and stir in Equal.
Additional Information
This tasty dish that has about 1/4 of the calories as the traditional dish.
