1 In a 10-inch skillet, heat oil over medium heat. Cook onion and sweet potatoes in oil for 5 minutes, stirring gently, until brown. 2 Then, reduce heat to low. Cover and cook 10 to 12 minutes stirring occasionally, until potatoes are tender. 3 Add brown sugar and jerk seasoning and stir. Cook uncovered about 3 minutes, stirring until glazed. Sprinkle with parsley.
