1 Preheat oven to 400 degrees F. Slice the sweet potatoes lengthwise into ½-inch-thick strips. Place in a bowl with olive oil and toss. Use nonstick cooking spray and coat on baking sheet. 2 Arrange the potatoes on a baking sheet, and bake the potatoes for 15 to 20 minutes, or until it is golden brown on the bottom. 3 Turn potatoes over, and bake for 15 to 20 minutes more, or until it is golden brown all over. 4 Sprinkle with salt and parsley , if desired.
