1 Mix tomatoes, onion, red peppers, and basil together in a small bowl. Add vinegar, salt and pepper and toss to mix. 2 Place chicken between two pieces of wax paper and flatten to 1/2-inch thick with a kitchen mallet or the bottom of a heavy pan. Sprinkle with salt and pepper. 3 Heat a large skillet on medium-high heat and spray with olive oil spray. Add chicken and saute 3 minutes per side. Spoon the tomato relish on top.
