Ingredients
8 oz cream cheese , softened
1 cup shredded cheddar cheese
0.5 cup mango chutney , divided
0.25 cup fresh chopped onion
1 oz seedless raisins , chopped (2 tbsp)
1 tsp fresh ginger root , peeled, finely chopped (to taste)
1 medium garlic cloves , minced
0.5 tsp curry powder (to taste)
2 tbsp unsalted cashews
1 fresh green onions , thinly sliced


Directions
1 In medium mixing bowl, using wooden spoon, gently combine cheeses, onions, raisins, ginger, garlic, curry powder, and 2 tablespoons mango chutney until well blended. Refrigerate 1 - 2 hours.
2 Preheat oven to 350°F.
3 On baking sheet, spread cashews evenly and bake 10 minutes.
4 Transfer spread to serving plate and garnish with cashews, green onions and remaining chutney.
Additional Information
Using electric beater, blender, or food processor to mix cheese and chutney is not advised because cream cheese will liquify. Serve with low-carb, whole-grain chips or veggie dippers.
