2 medium bananas
1 cup packed brown sugar
3 tbsp Margarine, 80% fat, unsalted , softened
2 tsp vanilla extract
0.25 tsp salt (optional)
2 cup whole wheat flour (or unbleached flour)
1 tsp baking soda
0.25 cup chopped walnuts , toasted


Directions
1 Spray 2 baking sheets with nonstick cooking spray and preheat oven to 350 degrees F.
2 In a large bowl, beat the first 5 ingredients with an electric mixer until well mixed.
3 In a separate bowl, mix the flour and baking soda until well combined, add to the banana mixture and mix well. Gently fold in the walnuts.
4 Drop the dough by rounded teaspoonfuls 2-3 inches apart on the baking sheets. Bake sheets 1 at a time until light brown, about 12-15 minutes. Remove cookies from baking sheet and place on a cooling rack.
Additional Information
Try replacing regular brown sugar with a brown sugar substitute like Splenda.
