4 Sweet Potatoes, orange, fresh, medium, 5" x 2", FDA (or yams)
0.25 cup olive oil
1 cooking spray
1 pinch salt
1 pinch chopped parsley (optional for garnish)


Directions
1 Preheat oven to 400 degrees F. Slice the sweet potatoes lengthwise into ½-inch-thick strips. Place in a bowl with olive oil and toss. Use nonstick cooking spray and coat on baking sheet.
2 Arrange the potatoes on a baking sheet, and bake the potatoes for 15 to 20 minutes, or until it is golden brown on the bottom.
3 Turn potatoes over, and bake for 15 to 20 minutes more, or until it is golden brown all over.
4 Sprinkle with salt and parsley , if desired.
