Ingredients
3 lb Beef, bottom round roast, lean
3 tbsp onion powder
0.5 tsp black pepper
3 medium garlic cloves , peeled and finely minced
1 tbsp paprika
1 cup salsa
12 floz Soda, cola, diet


Directions
1 Preheat oven to 350 degrees F. Rinse roast. Mix together the seasonings and water, and rub the wet roast on all sides.
2 Put in a roasting pan. Bake for 1 hour, then turn over and pour tomato salsa and diet cola on top of meat.
3 Continue roasting for another 2 1/2 hours or until tender, basting occasionally.
4 If meat is dry, add another 2 tablespoons salsa and 1/2 cup cola.
5 While meat is cooking, turn it over every now and then so that it absorbs the flavors. Serve with gravy from the pan.
Additional Information
The "surprise" in this recipe is the Diet Cola, which gives the meat a special caramel flavor.
