Directions

1 Preheat oven to 350 degrees F. Coat a bundt pan with cooking spray.
2 In a large mixing bowl, combine all dry ingredients and mix well.
3 Add applesauce, hot water, vanilla extract, and mix.
4 Add pureed sauerkraut and blend thoroughly.
5 Pour batter into a prepared pan; bake in the center of the oven until tester comes out clean, about 55 to 60 minutes.
6 Cool in pan for about 20 minutes, then turn out onto baking rack and cool completely. Sprinkle with a bit of cocoa powder mixed with Zsweet if desired.
Additional Information
Variation: Change the flavor by adding strong coffee instead of the hot water; or adding cayenne pepper and cinnamon to the vanilla.
