Servings
Ingredients
2 cup canned black beans , rinsed and drained (or any brand name)
1 medium onions , chopped
2 medium garlic cloves , chopped
1 chopped green bell peppers , chopped
7 cup cold water
1 tsp olive oil
1 pinch salt (to taste)
1 pinch black pepper , ground
0.12 tsp ground cumin


Directions
1 In a Dutch oven, sauté onion, garlic and green pepper in oil over medium heat, until tender.
2 Add beans and water, seasoning with salt, pepper and cumin to your desired taste.
3 Mix well and simmer for 25 minutes.
4 Pour the soup into a blender, set on puree. Once soup is to your desired consistency, return to Dutch oven on medium-low heat.
5 Pour a few drops of olive oil in bowl for added flavor, and dish up soup.
6 Serve immediately.
Additional Information
Garnish with garlic bread, croutons or chopped cilantro.
