Ingredients
1 tbsp fat free mayonnaise
1 tbsp fat free sour cream
2 tsp frozen orange juice concentrate , thawed
0.25 tsp grated orange peel
1 boneless skinless chicken breasts , cooked and chopped (about 1/2 pound)
1 medium kiwi, peeled , thinly sliced
0.33 cup Mandarin Oranges, fresh, sections
0.25 cup fresh chopped celery
4 Boston lettuce leaves , washed (or any lettuce leaves)
2 tbsp unsalted cashews , coarsely chopped


Directions
1 In a small bowl combine the mayonnaise with the sour cream, orange juice concentrate and orange peel and add the chicken, kiwi, oranges and celery to the mixture, tossing to coat.
2 Cover the bowl and refrigerate for 2 hours then serve the mixture over lettuce leaves and sprinkle with cashews.
