Ingredients
4 oz sun dried tomatoes
1.5 tsp crushed garlic
1 cup cold water , or reduced sodium, chicken broth
0.5 cup chopped parsley
0.25 cup fresh basil , chopped
3 tbsp olive oil
1 oz pine nuts , toasted
3 tbsp grated Parmesan cheese


Directions
1 In small glass dish, place sun dried tomatoes, cover with boiling water and let soak 15 minutes.
2 Drain and cut into smaller pieces.
3 In food processor or blender, place sun dried tomatoes, garlic, cold water. Process until well blended.
4 Serve over cooked fish or chicken.
Additional Information
This recipe can be made up to 2 days in advance, or frozen for up to 3 months.
