2 oz sun dried tomatoes (about 2 tomatoes)
1 cooking spray
0.5 cup fresh chopped celery
2 tbsp fresh chopped green onion
2 medium garlic cloves , minced
3.5 cup low sodium vegetable broth
2 oz linguine pasta , uncooked, broken into 2 to 3 inch pieces
1 tsp fresh lemon juice
1 pinch salt (to taste; optional)


Directions
1 In a small bowl, combine tomatoes and hot water. Let sit 15 minutes or until tender. Drain and chop tomatoes.
2 Heat a cooking spray coated medium pot over medium heat. Cook celery, onions, and garlic 5 to 7 minutes until soft. Pour in broth and let boil.
3 Mix in linguine. Lower heat and simmer 10 minutes or until pasta is soft. Add lemon juice and sprinkle with salt and pepper.
Additional Information
Be sure not to use sun-dried tomatoes packed in oil, it will add extra calories. One-half cup of orzo can be used in place of linguine.
