1 Soak sun-dried tomatoes in boiling water for 30 minutes. Strain and coarsely chop. 2 In medium bowl, mix tomatoes, avocado, onion, basil, pepper, orange juice, lemon rind salt, pepper, and garlic. 3 Transfer to serving bowl. Garnish with basil sprigs. Serve.
