Directions
1 Preheat oven to 350 degrees F. Spray a 9-by-13-inch baking pan with the cooking spray.
2 Beat together the oil and the egg substitute in a large bowl; stir in the Bisquick. Add the cheese and stir well; set aside.
3 Combine the zucchini, onion, garlic, mushrooms, and parsley; toss gently to mix. Pour the vegetables into the bowl with the baking mixture; fold gently.
4 Spoon the mixture evenly into the prepared baking pan. Bake 45 to 50 minutes until the top is golden.
