Ingredients
0.75 cup white all purpose flour
4 tbsp margarine , softened
2 tbsp reduced fat sour cream
2 tbsp sugar , granulated
1 cup sugar , granulated
1 eggs
2 egg whites
1 tbsp grated lemon rind
3 tbsp fresh lemon juice
0.5 tsp low sodium baking powder
0.25 tsp salt
1 pinch powdered sugar (to garnish)


Directions
1 Preheat oven to 350 degrees F.
2 Combine flour, margarine, sour cream, and 2 tablespoons sugar to make a soft dough. Spread dough onto the bottom of an 8x8-inch baking pan. Bake 20 minutes or until golden brown. Let cool.
3 Combine 1 cup sugar, egg, egg whites, lemon rind and juice, baking powder, and salt; spoon over baked pastry.
4 Bake 20 to 25 minutes or until there is no indentation when touched. Let cool; dust with powdered sugar.
Additional Information
Any citrus juice and rind will work great in these squares.
