Ingredients
4 flounder fillet (2 1/2 ounces each)
1 cooking spray
0.5 cup fresh chopped onion
1 medium garlic cloves , minced
0.25 cup fresh chopped celery
0.25 cup chopped carrots
0.25 medium red bell peppers , minced
0.12 tsp ground thyme
2 parsley sprigs , divided ( 2 tbsp)
1 tbsp grated Parmesan cheese
1 tbsp mayonnaise
0.5 tsp dijon mustard
1 tbsp fresh lemon juice


Directions
1 Rinse fillets with cold water, pat dry with paper towels and set aside.
2 Lightly coat medium skillet with cooking spray, heat over medium.
3 Sauté onion until tender. Add celery, carrot, and pepper.
4 Reduce heat to medium low, cover and cook 5 minutes, stirring occasionally, until vegetables are tender.
5 Increase heat to medium-high, stir in thyme and cook until all moisture is absorbed.
6 Stir in 1 tablespoon parsley.
7 Spoon an equal amount of mixture onto center of each fillet; roll lengthwise and secure with wooden toothpick.
8 Preheat oven to 400°F.
9 Lightly coat casserole dish with cooking spray. Place filets, seam side down, into dish.
10 In small bowl combine cheese, mayonnaise, and mustard. Spread mixture over rolls,sprinkle with lemon juice.
11 Bake 20 minutes or until the fish is lightly browned and flakes easily with fork.
12 Garnish with remaining parsley, serve.
