1 butternut squash , medium size
0.5 cup cold water
1 cup chopped apples , unpeeled
0.25 cup fresh chopped onion
2 tsp butter , melted
0.5 cup cottage cheese
0.25 tsp salt , to taste (optional)
0.12 tsp ground cinnamon
0.12 tsp ground ginger
0.12 tsp black pepper
0.5 tsp apple pie spice


Directions
1 Preheat oven to 350°F.
2 Cut squash in half, lengthwise, and remove seeds.
3 Place squash halves, cut side down, in 12" x 8" x 2" baking dish . Bake for 45 minutes, or until the squash is tender.
4 In large skillet, melt butter and sauté apple and onion until tender.
5 Stir in cottage cheese, salt, cinnamon, ginger, and pepper. Set aside.
6 Leaving shells intact, carefully scoop out squash pulp and chop it.
7 Add chopped squash pulp to apple mixture in skillet and stir well.
8 Spoon mixture back into squash shells and sprinkle with pie spice.
9 Bake for 15 minutes, or until heated thoroughly.
