Ingredients
2 cup Wine, dessert, dry
1 cup orange juice
1 oz grated orange peel (6 strips)
3 tbsp sugar
1 tsp vanilla extract (or 1 vanilla bean, split lengthwise)
6 cup fresh sliced strawberries
2 oz fresh mint (6 sprigs)
0.5 cup light vanilla ice cream, no sugar added (optional)


Directions
1 Combine the wine, orange juice, rinds, vanilla extract, and sugar in a saucepan.
2 Bring to a boil, reduce heat and simmer 5 minutes. Strain mixture through a sieve over a large bowl in order to discard solids. Let cool for 30 minutes.
3 Stir in strawberries and cover and chill for a few hours. Spoon strained strawberries over vanilla ice cream and garnish with mint.
